It's Shrove Tuesday! ~ Pancake Time!
It's Pancake Day! So I as Wicid Ed feel that I need to share my favourite Pancake recipes with you. Yey!
They are easy to make and very scrummy :o) Enjoy!
The Classic Pancake
Makes 12
Preparation Time: 10 Minutes
Cook: 20 Minutes
Ingredients:
140g plain flour
200ml whole milk
2 eggs
25g unsalted butter , melted, plus a little extra for greasing
1. Sift the flour with a pinch of salt into a medium-size bowl and make a well in the middle. Mix the milk and 100ml of water together. Break the eggs into the well and start whisking slowly. Add the milk and water in a steady stream, whisking constantly and gradually incorporating the flour as you do so.
2. Whisk until the batter is smooth and all the flour has been incorporated. Set the batter aside to rest for 30 mins, then whisk the melted butter into the batter.
3. Heat the pan over a medium heat. Very lightly grease the pan with melted butter. Using a ladle, pour roughly 2 tbsp of batter into the pan and swirl it around so the bottom of the pan is evenly coated. You want to use just enough batter to make a delicate, lacy pancake. Cook the pancake for about 45 secs on one side until golden and then using a palette knife or fish slice, flip the pancake over and cook the other side for about 30 secs until it freckles.
4. Slide the pancake out of the pan and either serve immediately or stack on a plate with baking parchment in between. Continue until all the batter is used up.
My Favourites Extra's: Add some a sprinkle of sugar, a squeeze of lemon and a pinch of cinnamon. Or you can make the Berry Compote from the recipe below.
American Style Pancakes with Berry Compote
Serves 6
Preparation – 20
Minutes
Cooking – 30 Minutes
Ingredients
For the fabulous berry Compote:
500g frozen mixed summer fruits
00g Caster sugar
For the Pancakes:
250ml full-fat milk
2 eggs
4 tbsp sunflower oil , plus extra for
frying
175g plain flour
4 tsp baking powder
1 tbsp caster sugar
To make the compote, put all the ingredients into a medium saucepan with 1 tbsp water. Stir and simmer gently over a low heat for 15 mins until warm and syrupy.
1. Meanwhile, make the pancakes. Mix the milk, eggs and oil in a bowl. In another bowl, mix the flour, baking powder, sugar and 1 tsp salt. Stir the dry ingredients together, then slowly pour in the wet ingredients until just combined.
2. Heat a non-stick frying pan and add about 1 tsp oil. Pour in about 75ml of the pancake batter. When bubbles form on top, flip the pancake over and brown the other side. Keep the heat on medium so the middle cooks. Keep warm in a low oven while continuing to make pancakes with remaining batter.
3. Serve warm pancakes topped with warm or room temperature compote.

100grams plain flour
1 large egg
150ml water mixed with 150ml milk
Put the flour in a large bowl, add the egg and half of your liquid mixture.
Beat the new mixture and add the rest of the liquid.
Make your pancakes!
I made too much mixture and felt a bit sick. I did however make my mum six pancakes! Sugar and lemon juice on them =)
